With such a variety of locally grown produce, farmers markets can be a great source of inspiration. Sometimes the inspiration comes in the form of a refreshing cocktail or even some tasty treats. In this case, it’s both. Presenting the Raspberry Rum Rum, featuring our Pacific Rum, with a Banh Chuoi Hap (Vietnamese Steamed Banana Cake). Recipes below! Head to Millennium Plaza Park for the Lake Oswego Farmers' Market to get yourself some fresh ingredients for this weekend’s creations. Raspberry Rum Rum
1 oz Pacific Rum
3-5 fresh raspberries
3 oz Almond Milk
1 oz Mint Syrup
Raspberries & Mint for garnishing
Directions
Muddle raspberries in the bottom of a glass. Add Ice. Pour Almond Milk, Rum, and Mint Syrup over ice. Stir/Shake well to combine. Add ice and raspberries to a glass cup. Strain the cocktail over the setup. Garnish with mint.
Banh Chuoi Hap (Vietnamese Steamed Banana Cake)

Cake Ingredients
5 banana ripe
1 1/2 cups tapioca starch (or rice flour)
6 tsp sugar
1/4 tsp salt
2 drops of Almond Extracts
2 drops Yellow Food Coloring (optional)
Sauce Ingredients
1 can coconut milk
1/2 cup sugar
1/2 cup water
1 tsp tapioca starch
Crushed roasted peanut, sesame seeds, or both
